JDRF Bake Sale

Recently my work had a team in the Juvenile Diabetes Research Fund (JDRF) walk, and did various things to raise funds.  Most recently - a bake sale!  These are always fun at my office, because someone comes around with a cart of goodies for sale - you get to participate without even leaving your desk!  The bummer side is that there are never vegan things.  I decided to make a donation, and it was of course vegan!  I tried my hand at some chocolate chip scones, recipe from The Joy of Vegan Baking.  I also made the coconut cream cool whip (blogged about below) to go with the scones

They were a huge hit - I recommend checking out The Joy of Vegan Baking for some awesome baked goods!

Delicious Dessert!

I veganized a delicious dessert recipe over the weekend, and have to share!  Find the original recipe here:


My modifications?  I used a vegan pudding mix, and made it with almond milk.  I also used this recipe for cool whip:


Don't be skeptical - it REALLY WORKS!!  To make the flavor less coconut-y, I added a teaspoon of vanilla. Word of advice - wait until the pudding is completely cool before adding the coconut cool whip, otherwise it will turn back into coconut milk, and it'll take longer to make :)

Oh, I also dyed the pudding mixture pink because I thought it was fun!  enjoy!
